Dish: Halibut with Puttanesca Salsa and Asparagus
Ingredients:
2- 7 oz pc of Halibut
salt and pepper
2 oz of olive oil
pinch of fresh thyme
juice of half a lemon
Halibut Directions:
Heat a pan over high heat, with oil in the pan.....approx 2 min.
Salt and pepper the fish and sear on one side for 3 min, until golden brown, Flip fish over, add thyme, turn heat off Baste fish for 1-2 minutes Squeeze lemon over fish, baste once more Reserve
Salsa Ingredients:
2 ripe plum tomatoes, chopped
6 black olives, pitted, chopped
10-12 capers
2 oz extra virgin olive oil
1 teaspoon of Italian parsley, chopped
Salt, pepper, crushed red pepper to taste
Combine all ingredients in a bowl, reserve
For Asparagus
12 asparagus spears, grilled or blanched
salt, pepper, lemon, olive oil, to taste
To assemble
Arrange asparagus on the center of the plate Place halibut on top of asparagus Spoon salsa over fish Garnish with micro greens (optional) Serve
