(TV Diner) - Steve Chase of the Salem Waterfront Hotel in Salem, Mass., teaches Billy how to make a mahi-mahi filet with ancho chili rub.
Ancho chili is a smoked poblano pepper that has a nice little kick to it. He dredges it in the seasoning and sears it on each side for three to four minutes.
To another pan he adds oil, garlic, asparagus, peppers, salt, pepper, and sautees until crunchy tender.
