(NECN) - If you are from New England you know that nothing says summer time like the sight of lobster!
What better way to kick off the season.
So Monday morning we are celebrating summer with an old fashioned lobster boil and putting a modern twist on the classic with a recipe for lobster fried rice!
It's one of the signature dishes at the
Inn at Ocean's Edge in Lincolnville Maine.

Lobster Fried Rice

3 eggs, scrambled
12 oz cooked lobster, chopped & tossed to coat with corn starch
6 cups cooked rice (cold)
˝ cup thinly sliced celery, bit size pieces
˝ cup thinly sliced leek, bit sized pieces
2 tablespoon sesame oil
2 tablespoons salad oil
4 tablespoons soy sauce
In a large pan, heat the 4 tablespoons of oil
add the rice & fry for about 3 minutes, stirring or tossing to keep rice moving
add the veggies and soy sauce, cook until veggies are tender
add the lobster & toss quickly
add in egg & stir well to disperse
season with fresh black pepper, once egg is cooked remove from heat and serve.
