Cookin' With Costa: Crab Cakes

(TV Diner) - Billy Costa joins Gerald Tice, the executive chef of the Omni Parker House restaurant in Boston, famed for its rolls, for Boston cream pie, and for where future president John F. Kennedy proposed to Jacqueline Bouvier.

Omni Parker House Crab Cakes

Crab Cake Mix

1 Pint Fresh Jonah Crab
Yellow pepper (small dice)
Green pepper (small dice)
Red pepper (small dice)
cup cracker crumbs
1 tablespoon Dijon mustard
4 tablespoons mayonnaise
1 egg beaten
tablespoon Old Bay Spice

Fennel Slaw Salad
1 large bulb fennel (Sliced thin)
Red onion (sliced thin)
Orange (segmented)
bunch cilantro leaves
2 tablespoons Olive Oil
1 pinch of kosher salt and white pepper

Chipotle Glaze 
cup honey
2 chipotle peppers

1. Combine the ingredients and saute in oil just covering the bottom of a saute pan until golden brown.

2. Place a mound of fennel slaw salad in the center of a plate. (oblong was used here).

3. Spoon or squeeze some chipotle glaze on the plate.

4. Place a crab cake on either end of the plate on top of the glaze.
