(NECN) - The "We" in the Way We Cook in Manchester, New Hampshire, refers to the two medical practitioners who opened this charming and intimate Mediterranean restaurant.

With an open bar off to the side and beautiful murals reminiscent of the vineyards and mountains of Italy and Greece, the dining area was lit softly by candles, but bright enough to easily read the alluring menu.

We chose Greek to start. The Saganaki was a pan seared cheese expertly glazed with brandy and lemon- perfect companions to please the salty solid cheese and Rosemary bruschetta wafers.

The baked oyster appetizer consisted of six oysters and a savory stuffing nicely presented in their shells. It was so good , we chose seafood again for an entrée !

The bouillabaise was outstanding with huge chunks of lobster, shrimp, salmon, scallops, mussels and baby clams-the best we have ever had. And, the well-seasoned broth was amazing, especially when eaten along with the warm delicious breads served with dinner.

The Spanakopeta was incredible---fresh and thick with spinach and feta and not just the usual layers of phyllo.

First dessert - chocolate times two with the Marquis cake, a confection served piping hot, with deep chocolate colliding with deep chocolate in each forkful. Glory!

The key lime pie was a nice contrast with the tart sweet of a well-made pie.

Our waiter was obliging with an infections laugh and not overly solicitous as in some fine dining restaurants where eating is less relaxed.

Prices were rumored to be high, but we found them very fair with appetizers $6 to $11, entrees $10 to $33 and desserts under $5.

This place, The Way We COOK, is a misnomer in title. The owners are actually great CHEFS who do more than "cook" with their fabulous menu served in a comfortable, un-rushed and friendly atmosphere.
